Ham & Egg Breakfast Panini
1/4 cup chopped green or red bell pepper
2 tablespoons sliced green onion
1 slice (1 ounce) reduced-fat smoked deli ham,chopped(1/4 cup)
1/2 cup cholesterol-free egg substitute
black pepper
4 slices multigrain or whole-grain bread
2 slices (3/4 ounce each) reduced-fat cheddar or Swiss cheese
1.Spray small skillet with nonstick cooking spray;heat over medium heat.Add bell pepper and green onion;cook and stir 4 minutes or until vegetables begin to soften.Stir in ham.
2.Combine egg substitute and black pepper in small bowl;pour into skillet.Cook about 2 minutes,stirring occasionally until egg mixture is almost set.
3.Heat grill pan or medium skillet over medium heat.Spray one side of each bread slice with cooking spray;turn bread over.Top each of 2 bread slices with 1 slice cheese and half of egg mixture.Top with remaining bread slices.
4.Grill sandwiches about 2 minutes per side,pressing sandwiches lightly with spatula,until toasted.(If desired,cover pan with lid during last 2 minutes of cooking to melt cheese.)Cut sandwiches in half and serve immediately.
