Asian Turkey Wraps
2 teaspoons canola oil,divided
8 ounces extra-lean ground turkey
1/2 cup finely chopped red bell pepper
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped onion
1/4 cup finely chopped celery
1 clove garlic,minced
1 tablespoon minced fresh ginger
2 tablespoons lemon juice
2 tablespoons hoisin sauce*
2 tablespoons sugar substitute
1 tablespoon sesame oil
1 tablespoon reduced-sodium soy sauce
Hot pepper sauce or red pepper flakes to taste
8 green leaf or butter lettuce leaves
Dipping sauce(optional)
*Hoisin is a thick,reddish-brown,sweet and spicy sauce used in Chinese cooking.It can be found in the ethnic foods aisle of most supermarkets.Plum sauce,another dark,sweet Asian sauce,can be substituted.
1.Heat 1 tablespoon canola oil in large skillet over medium heat.Add turkey;cook,stirring to break up meat,until cooked through.Remove turkey from skillet.
2.Heat remaining 1 teaspoon canola oil in same skillet.Add bell peppers,onion,celery,garlic and ginger;cook and stir about 2 minutes or until onion is translucent.Return turkey to skillet;keep warm over low heat.
3.Whisk lemon juice,hoisin sauce,sugar substitute,sesame oil,soy sauce and hot pepper sauce in small bowl.Stir sauce into skillet;simmer about 4 minutes or until sauce is absorbed.
4.Spoon 1/4 cup turkey mixture onto each lettuce leaf;roll up.Serve with dipping sauce,if desired.
